What is this plant, and is it edible or not?
It grows in the summers in Vermont, and it is only about an inch tall. It looks like a little jade plant, and makes little, pointy yellow flowers ontop of it. It grows in patches, and is a creeping plant. I have seen it growing in pretty dry, but both sunny and shady areas. Please tell me what it is, if you know.
Purslane (Portulaca oleracea) would be my best guess. However, before attempting to eat it, get a positive identification. Your county extension service should be able to help. They will be in contact with your local Master Gardeners too. Once you've positively identified it as Purslane here's a little history. It's been eaten in India for over two thousand years. It is a common vegetable in Europe. It was a common green used by free and slave workers in the United States. Euwell Gibbons raved on and about the virtues of Purslane. I like the tender tips boiled for about 10 minutes with butter, salt and pepper. I also like it with vinegar. It can be used to to firm up stews etc just like gumbo filet. You can pickle the stems. Euwell dedicates 5 pages to Purslane in his book, Stalking the Wild Asparagus. If you identify your plant as Purslane, not only can you eat it, you'll love eating it. Its supply is unlimited.. It doesn't have a heavy taste. It melds well into any meal. It is heavy in Vitamin C and consists of a lot of fiber. Learn to regulate your intake. It takes a lot of eating to get to the point of making you stay close to the toilet. But, it can happen. Learn to adjust your intake. You've found Purslane, India's gift to the world.
